Happy Pastel Weekend

Ok, so I’m not a religious person, but I AM an Any-Excuse-For-Celebration person. My family made sure holidays and birthdays were special when I was growing up, so I tend to over-exaggerate this in my adult life. Easter has always conjured up feelings of warmth, pretty colors, and spring for me (where thanksgiving always feels dark and brown and heavy).

Having just recently remembered that this weekend was Easter, I invited some friends over for a ‘who needs easter’ brunch on my floor and whipped up a batch of pretty pastel macarons that taste amazingly perfect of cinnamon with a light raspberry whipped cream filling. It was my first time separating batter for color purposes, and considering my many disasters when breaking the recipe even slightly, I’m super happy they worked as well as they did.
